Sourcing
A subtropical climate is most ideal for the growth of cinnamon trees, which is found in certain regions of East Africa.
Cinnamon—both the spice and the essential oil—is derived from the bark of the cinnamon tree. The vast majority of cultivated cinnamon is intended for the spice industry. Cinnamon is harvested all year round, after the bark reaches three years of age. The tree is then cut down so that its bark can be separated from the trunk and thicker branches. The tree's bark then begins to regrow, and when it reaches the appropriate size, it is harvested again. After the tree bark is peeled off, it is dried in the sun. The essential oil is then extracted from it by steam distillation.
